Holidays are coming!

You think I'm talking about Halloween. No, I'm actually talking about Christmas. Stop rolling your eyes at me. Do you realize that there are only 74 days until Christmas? I'm not ignoring Thanksgiving. It's actually my favorite but it takes less pre-planning.

Now, let's do the math.
74 days (or 1776 hours) I will be out of town for 9 days, that leaves 65 days (1560 hours). There's Thanksgiving and it's week of cooking, that leaves 60 (1440) . I work full time so 8 hours a day for 47 work days equals 15.6 days, leaving 44.4 days (1064). I have to sleep some, let's say 6 hours for 60 days is 360 hours which leaves us with 29.4 days (704). Then consider that I have a life and need to cook, eat, clean, drive to places etc. so take off three hours a day for that which is a total of 180 hours. So, now we are down to 21.9 days (524). Let's throw in 1 holiday party for a total of drive and party time of 6 hours. That brings us to a final tally of 21.65 days (518 hours). That is not a lot of time people to get everything done.

Have you started getting ready? Did you make your list of naughty and nice? Have you done any gift researching? planning? I can answer yes to all of that and so, I feel for once I have a handle on things.

I have made my lists. I already made my Creme de Vie. I have started researching a gift I want to give. I even already have 2 gifts already and am going to buy a few stocking stuffers this weekend because I have a coupon that expires at the end of October. I am now considering my holiday card design and hope to start gathering supplies this weekend.

So, get to it the Holidays are coming!

New Year's Eve Traditions

The party is at our house and here are some of the traditions we have adopted.

* Champagne toast I have no idea where this started and why it is done.

* Eat 12 grapes. This is a Spanish custom. The 12 grapes symbolize the 12 months of the year and the folklore is that if you don't eat the 12 grapes you will have a month of bad luck for every uneaten grape.

* Toss a bucket of water out the front door. Not sure where it came from but the water used to be the actual dirty water from the final cleaning of the home. It the whole out with the old in with the new idea. Now we use clean water and its purely (no pun intended) symbolic of the dirty water.

* Eat lentils. This I believe originated in Europe. Lentil soup is a soup full of small round green beans which symbolize an abundance of coin and financial wealth in the coming year.

* Wear yellow underwear. I was told that this is a Costa Rican custom for good luck. I do know that yellow is always considered 'lucky' with the birth of a child. I think that dates back to pre-sonogram days when people didn't know the sex of the child so if you bought decidedly blue or pink clothing you jinxed the actual sex of the baby. So, I will go with yellow symbolizing luck, what the heck.

* Parade around the perimeter with luggage. No idea where it came from but we were told that it is to promote travel in the new year. It's fun and we are easily amused. It's has actually become a favorite of guests to either do or watch because we look quite foolish.

I know there are many other traditions around the globe. I think I may have to research this a bit and add something new for next year. LOL!

Counting down

So, are you ready for the big countdown? The only thing left to do at my house is clean the floors again.

Everything looks so presentable I almost don't wnat anyone to come over and mess it up but then what would the point be of getting everything all tidied up.

Last night I even gave my self a mini mani and pedi. I say mini because it was done by moi and well I'm not a pro but mom would be proud that at least I made an effort.

We aren't expecting too big a crowd tomorrow only about 40 people total we have had much more. I hope the weather holds up. Cool but not cold would be nice. Dry not wet would be fabulous.

I still haven't figured out my theme for the new year. I kinda wanted to toast to it at midnight. I was thinking a toast 'to action' since I want a verb but haven't picked one but there I go again with a noun so I don't think so maybe 'to verb' just to cover all my bases but that sounds silly. Well, I still have some time to figure it out but I really just want it to come to me, to just feel right. Hmmm maybe maybe a toast 'to act' that has potential. I've got to noodle it a bit more.

We brought home the case of champagne yesterday. Yes, I can say Champagne NOT sparkling wine because it is French from the champagne region. It's my splurge.

Well, here's hoping its a healthy happy one.

Merry Christmas

It's Christmas Eve. I am at the office. Bah Humbug! Some things need to get done so whatever.

The family will be gathering later at MILs house. My 3 boys will be there shortly to help (read: hang out) with the roasting of the pig.

Every year at MILs they get someone to dress up as Santa and give a gift to each child. I am toying with the idea of still putting a gift in for 20 even though he's 20 because I think he would get a kick out of it. We'll see what I decide.

I actually stopped at Target this morning on my way into work only because I love the rush of shopping on the 24th. I really didn't NEED anything but I bought the boys some t-shirts that were on super sale just because.

I didn't get all the baking I was supposed to do done and so had to relent and buy some baked goods from the store as gifts. *sigh* Better planning is in order for next year. I would love to have a Christmas of only homemade gifts but I know that's just pie in the sky.

I was very worried that my brother would be stuck by himself in Boston where he has been working on assignment for months but he texted me early this morning that he made it home. I am truly happy and relieved that he will be with his family in Chicago for the holidays even though he says he will spend most of the day shovelling the driveway before the in-laws get there.

My kids are of the age where they tell me they are missing the Christmas feeling. I told them it changes. They aren't kids anymore. They will feel "it" if the spend some time prepping gifts for others especially kids. The joy you feel when giving is the "it" that replaces the rush, excitement and anticipation you had as a kid. It will be fun to see what they come up with and how they feel about it later.

What?!

I can't hear you over the cacophony of thoughts in my head. The loop de loop that is the list of things I want to do. It's as if there was a scratch in the record and it just keeps replaying the same part over and over again. It pretty much sounds like this: clean this, bake/make that, wrap something, clean this, bake/make that, wrap something....

Gratefully, friends came over on Sunday and even though I know I talked about baking I didn't. I truly disconnected for a while at least. I sat, talked and laughed. Imagine, I enjoyed some downtime with a friend. How awesome is that? Of course, as soon as they left I cleaned something, wrapped something and planned the next day's baking (all the making is done!). To give you a clue as to exactly how much this has taken over my brain. I found myself (I think I was sleep walking) in the kitchen at 2:45 standing in front of the open refrigerator. I don't know why exactly but this morning when I actually woke up I felt a compelling urge to check the supply of milk on hand. Who knows.

I have also started thinking about next year because apparently I don't have enough on my plate trying to finish this year that I feel I must start with the next one. What do I want to do next year? Am I happy with what I 'did' this year? Should I set goals or just let the year roll however it wants, as if my goals could actually alter that anyway. But I want to do so much baking before then, hmmm maybe I should start baking for next holiday at the start of the new year. Can I freeze things for a whole year? Will they be any good? Maybe I should research that a little in all my free time? I'd really hate to do the work and freeze the stuff and then it would be bad next December and I would feel even more pressure than I do now. OK, I need to stop thinking about January and focus on the 3 days I have left. Yes, I can do math! I know that Christmas is the 25th but we have our big celebration on the 24th and since I have to work on the 24th, I need to have everything finished before going to bed on the 23rd. So, 3 days left to do whatever is going to be done.

The trick is to get it done I need to shut my brain off so that I stop thinking all these other miscellaneous and assorted rambling thoughts and focus on the day I we are in right this very minute. I don't know how to do this.

So, tonight the kitchen goals are: chocolate crinkle cookies, mix & refrigerate pie crust, mix & bake a batch of sugar cookies and refrigerate another batch, make coconut macaroons, make truffles (maybe), make biscotti (maybe), make a grocery list for hubby to buy final ingredients needed for holiday desserts that I was assigned to take for the 24th plus what I am taking on the 25th.

Tomorrow's goals are: Wrap a bottle of wine, box & tag the final cookie gifts, go to coffee with girlfriends

Wednesday's goals are: Bake 2 desserts for Xmas eve and any remaining cookies.

You will note that I have truffles and biscotti as maybes. I have all the ingredients at home for both. These are both new items that I have never made and been wanting to try. I actually already mixed the truffles and the batch is sitting in the fridge so that has a better chance at getting done albeit maybe not in time for Xmas but for New Year's Eve. We shall see. I have an assortment of things to coat them in such as cocoa powder, confectioner's sugar, Xmas sprinkles, 2 colors of sanding sugar and pecans. Why so many well its simple I couldn't decide so I got them all and figured I'd decide when the time came and its almost here and I still don't know what I'll do. Who knows? not me.

So, like I said lots going on but really its mostly in my head. LOL!

Me Elf, you Santa

The past few days and the next few, I suspect are very task oriented at my house. Do this, get that, I did this now you that. Of course all of this is in an effort to create a perfect holiday. As if- LOL!

As you know if you have been reading, I have been making gifts and the past few days hubby and sons have been delivering them. They have delivered cakes and bottles of homemade egg nog to teachers, coaches, and offices. Over the weekend it will be the neighbors and early next week our workplaces and then finally the family for Christmas.

I have also sent hubby, who has time off during the holidays on daily errands. He bought boxes and stamps the other day and today he is shipping, wrapping (hopefully) and doing a grocery run. Of course, for them to do the errands and delivering I do the prep work for them the night before. It has been working out, things are actually getting done. I am feeling like I may get it all done in time for Christmas. I have had a few snafus (sp?) with the sewing machine but all that is doing is moving me into the kitchen where I know my way around to make a few things to replace the sewing projects. Thus, the grocery run for hubby today. I have even been toying with making biscotti which I have never done before but that may wait until the end to be a gift for me, if I succeed.

It's all coming together. The fact that I just wrote that unnerves me a tad because I may be jinxing the whole thing. I hope not. Comfort and Joy!

Final Countdown

Only 10 more days 'till Christmas.

I thought I was done with all the shopping. I just needed to wrap and check off the list of names as I went along. That was until I started trashing my sewing gifts. Now I need to either go out and shop or come up with something else to make at this stage of the game. I am leaning towards restaurant gift cards. We shall see.

Last night I won a minor skirmish with the sewing machine but the war is far from over. I was able to produce 2 decent looking items out of 4 that were attempted. I only trashed 2 last night. People that's progress. Truly. They aren't done yet. I need to do some final hand stitching and press them before they are ready to give but I think they may be giftable (yes, I know that's not a word but it should be) and that pleases me to no end. You honestly can not imagine.

I think I am going to give it a rest tonight and finish the Christmas cards so that maybe people will get them before the end of the year. I will feel a sense of accomplishment and then I can go back to the sewing tomorrow. The goal is to be done before the weekend so that I can spend it doing the final baking. I give cakes as gifts to some neighbors and doctor's offices so they can be shared by many. So that's the plan but I always have a plan don't I just like last weekend when I wasn't going out and I didn't get home Sunday until close to 1:30 and lost half a day of doing stuff at home. Oh, well. I can only do what I can do. Gimme patience.

It's 4th of July weekend. I wanted to DO something meaningful. Since I couldn't figure out what to DO, I decided to make a purposeful donation. I started researching and liked this OPERATION GRATITUDE - Care Packages for Soldiers. I may not agree with the reasons for the fighting but the troops deserve and have my support. I find this is a small way I could put my money where my mouth is. Check them out, if you have a chance.

Top of the morning to you, and the rest of the day to yourself!

There is absolutely nothing Irish about me. I'm sure we'd have to go back to the beginning of time to trace any roots even remotely near Ireland. Yet, somehow, today everyone has a little bit of the luck 'o the Irish in them, don't they? I remember in grade school going around pinching people if they didn't wear green. My kids both had the same Irish teacher for 2nd grade and she taught them (read: us) this Irish blessing which still makes me smile and think of her.

I am making Irish Soda Bread this evening to go with my Carne con Papas because well, we live in Miami and that how we roll. Cubans did not melt in that great 'ole melting pot of the USA, we prefer a kaleidoscope, always able to show our colors. Today just has a bit 'o green in it, just for fun. Enjoy your day! Next event...

Christmas is over. The gifts have been given, everyone has been seen. There was lots I didn't do that I wanted to but it's all over now. Now, we gear up for then end of year, the last scheabang. As in the past we are hosting a New Year's Eve party and so the clean up and set up has begun.

Christmas village up & working - check. Tree still up - check. Public areas decluttered - check. Everyone invited - check. Hats and noisemakers - check. Champagne - to be picked up Tues. Grapes- pending. Backyard spotless - check. Pool cleaned - being done now. Backyard lights working - check. Dog bathed - set for Wed. Liquor cabinet stocked - check.
We are good to go.

I have no clue how many people are coming. I don't know what they are bringing. This is always a trauma for many not for me. It's a true pot luck. Bring whatever or not. I makes no matter. If you can come then do. If you don't RSVP and your plans fail, my party can be your back up, that's OK, show up. The only ones that have learned to appreciate this are my kids. The past 2 years they have invited friends and opened the invitation to their families etc. A few have come. Some are now going to be repeat guests.

People feel like their imposing, like they need to help me pre-plan. What if everyone brings dessert?! I laugh and say then we all eat dessert - oh the horror. It doesn't matter. I didn't go because I hadn't told you I was going and I didn't want to put you out at the last minute. This is not a sit down wedding people! It's a New Year's Eve party. If I run out of champagne (which I never have) then we'll toast with the next available thing. It's not about the stuff. I don't know how to impart that any better in my invitation. It's about the being with friends and family and sharing the time together. Here's the e-vite that I sent out this year:

It’s that time of year again! You are cordially invited to make merry and party hardy at the New Year’s Eve Bash! WooHoo! As you know (unless you are a newbe) the invitation is officially extended to you and anyone you would like or are obligated to kiss at midnight. There will be partygoers of all ages and all ages are welcome from abuelita to el bebe. Rumors are the adults may be outnumbered this year, as my children are actually inviting people too! (Can I get another WooHoo!?) We provide music, champagne for those old enough and sparkling cider for those not old enough and grapes to eat at midnight. In addition, we have a few other traditions such as traipsing around the perimeter of the house with luggage (to bring travel in the coming year), we throw the bucket of water out the front door (to wash away the evil spirits that may haunt us from this year) we ask that this event be limited to one person per family. We will also have lentils to be eaten at midnight (to promote good fortune in the coming year) provided by Miriam. And last year (I think) we learned that we should wear yellow underwear (for good luck according to the Costa Ricans), plan accordingly, underwear not provided at the party. ;) This party has been had in melting heat, cold (it all relative, people we do live in SoFLA) and in the rain. Nothing will keep us from ringing in the New Year! So, where is this shindig? xxxx SW xxx Court. My cell 305-xxx-xxxx. What do you bring? Whatever you want or nothing at all. It’s all good. If you need to eat or drink something special bring it. If you want to use us a guinea pigs and try a new recipe, fine by me. If you didn’t think you were coming, and last minute had a change of plans, please show up. There are no rules, other than keep it legal and there are no rules. Dress up, dress down just come and have some fun! If you need to hear or dance to something special, please bring it although I must say we traditionally have everything from Celia Cruz, to the Partridge Family to Christina Aguilera to Will Smith and Tim McGraw. We are quite an eclectic bunch.

Disclaimers: We have a pool that is ungated. Although there are many who will be more than willing to jump in after a child we ask that you keep track of your own. There is usually basketball playing in the backyard and football playing in the front (yes on the lawn-its perfectly safe) expect sweaty, grass stained, dirty children on the ride home regardless of how they arrive.

Bailout economy Christmas

This year the Season has been different in this bailout economy culture. We have our jobs and haven't had any income cuts just the expense hikes that have been crunching for a while. As I don't qualify for the any congressional bailout funds we have found other ways to scrimp and save.

I have always made Christmas gifts from the kitchen for neighbors and co-workers. This year that list expanded. Honestly, I enjoyed making it all and as a bonus it was more economical than buying stuff and I think more useful. The only gifts that I truly went to a store to buy were for the kids. The few that I have to give to got their toys.

Adults in the family are mostly getting homemade things too. I made so much Creme de vie this year and gave so much that I have actually run out. I need to make more. I made 5 liters, more than I ever make and was short. The last bottle that was actually going to be a gift for my boss, 19 asked if he could give to his girlfriends parents. So, the boss is getting cranberry bread that was intended for the host of Christmas day brunch - oh well.

Which leads me to my kids. Part of my gift to 19 was to give him money to buy his girlfriend tickets to go to see The Nutcracker. He wanted to surprise her and he did. He told her to dress up nice, suited up and armed with tickets in a Santa gift bag and a bottle of creme de vie with an ornament hanging from it he went to her house to spread Christmas. I was the one bottling and scrambling for the bag at the last minute. As he was ready to walk out the door, he looked at his wares and said, "wow, mom. This all looks really nice. Thanks." He gave me a kiss and went out the door. Did he know that he just gave me a gift? After their outing, they went to dinner and after 11pm he called. "Are you up? We can go by and tell you about it, if you want?" Yes, I'm up, come on over. Of course, I jumped out of bed and got dressed and went out to wait for them. I listened to their retelling their evening. Her anticipation, his nervousness, her surprise, their enjoyment at the show. 16 sat with us and entertained us all with his sarcastic comments peppering their story. What a gift they gave me. I didn't get to bed until after 1am and I'm at work this morning but what I gift I had last night sitting with my boys and his girlfriend sharing stories and laughs. Priceless!

I need you to go to the store, please.

I think if my husband hears those words for me again, he will return with divorce papers. I have been baking for 2 1/2 weeks and have said those words countless times. Each time he asks: You need it now? My answer is always the same: Well, I guess not really but then I'll just have to throw this out because I can't finish it without that and then I don't know when I'll have time to make it so I guess I just won't. He's gone every time to get whatever item I have just realized I am in need of and asked is there ANYTHING else we are low on. No, no that's it I tell him but take your phone just in case.

Honestly, I don't blame him for wanting to throw the 5 lb bag of sugar at me because I have been so scattered about my baking this year. It's really pathetic. It's been like ADD baking. I make 4 pie crusts then decide to make a rum cake and don't have you know a key ingredient like - rum. Then he goes to get that while I take out butter to soften for cookies. So, I make the cake later. Much later.

Next year I need to really organize my holiday baking. I mean I was so good with Thanksgiving. I did Thanksgiving in like record time. But I have been a disaster about Christmas baking so much so that it's even bothering me. Yesterday (Sunday) after he went to the grocery store on Saturday and stocked me up on Milk, Butter, eggs, flour and sugar. I went to the store because we ran out of brown sugar, and plastic wrap so 1) I couldn't finish some cookies and 2) how am I supposed to gift them if I can't wrap them. He was watching football so I didn't think it prudent to ask him to go.
RESOLUTION: So next year, a list of all the things I am going to bake and a plan as to when so that the groceries are done accordingly.
I won't hold my breath.

It's a Wonderful Life!

I know I disappeared but I think I am back now. I won't get into why I disappeared because I don't want to bitch and moan about things. Suffice it to say it had to do with GM and she's back at the ALF at least for now. Moving on.

What I want to tell you about is that I got what I wanted for Christmas yesterday. My boys (all 3 of them) had never seen the movie It's A Wonderful Life. So, I popped it up on the Netflix list, we got it on Thursday and I sent the 3 of them an email. I told them that I wanted them to plan (not me) on a time when all 4 of us would be home and able to watch the movie uninterrupted. I was asking for 132 minutes, family movie time.

Mind you, hubby hates movies that are not linear from beginning to end. So, I knew he was going to struggle with the back and forth in time. It's also in black and white - duh! and I knew that wouldn't win them over either. But it's a classic and I thought that it needed to be seen.

Well, they did it. We all watched it last night. No laundry, no homework, no surfing, no texting, no reading, no phones were being used at the same time. We all just did one thing - watch the movie and of course comment along the way. And guess what?! It wasn't horrible. They actually liked it. They thought it was a little slow and probably could have been shorter but they liked it. Hubby of course, moaned when they story went back in time but he hung in there. I of course, cried at the end and they teased me. It was all good.
I got my Christmas wish...hope you get yours.

'Tis the season!

Where have I been?, you ask. Well, I've been shopping that's where. I started Black Friday and have been at it since yesterday. I'm done now. Did you hear that? I am done with the gift shopping now I begin baking. Yea! I love this season of giving. I craft, I buy, I bake, I cook all the fun things!

I made one girlfriend a cake which I gave her for Thanksgiving. Now I will make goodies for the neighbors and other girlfriends and a few of 16s teachers.

I also made my seasonal charitable donation to 2 teacher proposals through Donor Choose. I have the button there on the sidebar. I really like this site because it funds specific requests that teachers want for their classes but due to budgetary restraints they can't fund them. Take a look. You may find something that moves you to give.

I have made batches of Creme de Vie (see: http://cubanfood.blogspot.com/ ) for recipe. Now I will start on cookies and cakes and pies and I am going to make meringues with the egg whites from the creme de vie and GM asked for banana bread not too Christmasy I know but she asked so I'll make it for her.

Speaking of GM the boys went with me over the weekend to see her. She was thrilled to see them. We had a very nice visit and I got some great pictures one of which I already enlarged 5x7 and framed. It will be one of her Xmas gifts plus her chocolate covered cherries (a must) and a new nightgown and robe and some lottery tickets. She's back in the hospital again. She's calm this time. They have found a tumor in her uterus and her cumedin (sp?) levels were high. They are getting her blood levels back to normal and meanwhile they are checking her pacemaker again. We'll see if she agrees to the operation to remove the tumor. That will be tonight's adventure. I'm leaving it in God's hands.

So, tonight after visiting and dealing with GM, I will finish wrapping and settling the gifts under the unadorned tree. It has lights but no ornaments. I have some loose ornaments in a drawer that were purchased throughout the year I will hang those tonight to see if hubby gets the hint and brings the rest of the stuff down from the attic. This weekend the baking begins in earnest. I'm looking forward to it.

There are so many things that I want to do this season that I have a list (duh!) I''m list lady. Let's see how much I get done. The only thing that didn't get done for Thanksgiving was getting my nails done. I spruced them up a tad at home but they weren't done. We'll see how much I get done on the Xmas list.

Ornaments

I have already done my annual ornament shopping. Each year I give ornaments to my boys.

They went through the Hallmark Wish Book and initialled next to each ornament they would like and then I go through and pick out what I want from there or not and surprise them. I try to get them each one they picked. I also try to pick an ornament that has a significance, that ties into something they did in the past year or a favorite thing.

Like when the boys loved Power Rangers, they each got a Power Ranger ornament. Or for example 18 graduated high school in May, so it's easy to get him a graduation ornament because there are tons of them. Sometimes it can be related to a vacation, an activity or similar event. Like their first fishing trip, they each have a different ornament for that.

Hubby likes Santa, so his ornaments are usually Santa doing something whether it was playing golf, surfing on a remote control, juggling sports balls etc. Those are some he's received in the past. All 3 of them are also big on Super Heroes. We have a quite a few hanging on the tree as well as athletes or ornaments representing the various teams they support.

I am happy with what I got this year. I was thinking about this last night because tonight I will probably sit and write a note on the boxes and date them with the year to commemorate the reason for the ornament and wrap them. That way, if they find them, they will be wrapped and they can still be surprised.

Post-4th

It feels like Sunday but it's only Saturday. I love it!
We ate so many yummy things on the 4th at the BBQ. We had burger (of course), bratwursts - 2 different kinds; I think smoked and not smoked, homemade empanadas - 2 kinds, one stuffed with chicken the other beef, chorizo made on the grill that was sooo good, my pasta salad, lovely wines, a baked cheese ziti, and the appetizers were chips of course, a cheddar cheese ball, a cream cheese, spam concoction that had something else on top I don't remember what. Then for dessert was the Red Velvet Cake and mini cupcakes. I had one of everything but I had no chips and no bread. I ate all of my meats without bread. I was very proud of myself.

I commented that we are getting old because the get-togethers are now more adults than kids. We used to be out numbered. Now the kids are moving on and the adults are left to only fend for themselves. There were a handful of kids there compared to what we used to have basically because half of those kids are 18 now and living their own lives as they should. The kids that were there did set off their own fireworks in front of the house. I watched the TV specials and saw fireworks in DC and Boston. They were really nice. A good evening and I still have the weekend ahead of me. Nice.

4th of July

So what's going on for the 4th. My dad's in Marco Island, some of hubby's family is in the Keys, 18 went to Bimini with some friends. This evening I am going to some friends house to BBQ and hang out and 15 and his friends will throw some firecrackers. My food contribution is an orzo pasta salad and a red velvet cake. The cake is at hubby's request. He really loves it and I haven't made it in maybe a year. The salad was super easy. Anyone can make it. I watch a lot of Food Network and quite a few pasta salads were made in the past few days. The one I made was inspired by both Sandra Lee and Paula Deen. Paula for the veggies that I chose to put in it plus the idea of using orzo instead of a rotini and Sandra for the dressing.

Easy Orzo Pasta Salad
Boil a box of orzo. Don't forget to salt and oil the water. While that drained, I tossed in 2 bags of frozen vegetable medleys (carrots, snap peas, broccoli and water chestnut) to the same water salting again and let that cook up for a few minutes. I chopped 1/2 can of water chestnuts and tossed it into a bowl. Added the orzo. When the veggies were done I drained and tossed them in too. I picked out the large pieces of broccoli and carrots and cut them up into smaller pieces. I poured 1/2 a bottle of creamy Caesar salad dressing (I like Newman's) and mixed it all up. I added a little more dressing to get it to the wetness that I like and put it in the fridge to chill. It's that simple.

You can pick whatever pasta you like and whatever veggies you like and I have done it in the past with an Italian vinaigrette dressing and that's yummy too.

The Red Velvet Cake recipe is adapted from the Wall Street Journal back in Feb 2007 and they adapted it from "The Confetti Cakes Cookbook" and the icing was adapted from "The Waldorf Astoria Cookbook".

It's a 3 layer cake so butter and flour 3 round cake pans and preheat the oven to 350.

Ingredients:
31/2 cups flour (I used all purpose, they say cake flour)
1/2 cup unsweetened cocoa (not Dutch process, I used Ghiradelli)
1 1/2 tsp. salt
2 cups oil (I used veg., they say canola)
2 1/4 cups sugar
3 large eggs
6 tbsp. (3 oz.) red food coloring (it comes out to one little bottle)
1 1/2 tsp. vanilla (I used 1 heaping tsp of Dbl strength Madagascar vanilla cuz it's strong stuff)
1 1/4 cup buttermilk
2 tsp. baking soda
2 1/2 tsp. white vinegar

Whisk flour, cocoa and salt in a bowl & set aside. Place oil & sugar in bowl & beat at med speed until well blended. Beat in eggs one at a time. With machine on low, very slowly add food coloring (be careful, it may splatter). Add vanilla. Add flour mixture and buttermilk alternating in 2 batches. Scrape down bowl and continue to beat just long enough to blend. (over mixing makes for a tougher batter). Place baking soda in a small dish & stir in vinegar add to batter with machine running. Beat for 10 seconds to incorporate. Divide batter into 3 pans and bake for 40/45 minutes until tester comes out clean. Cool in pan for 20 minutes, flip and cool completely before icing.

Icing
2 cups heavy cream
12 oz. cream cheese, at room temp.
12 oz. mascarpone
1/2 tsp. vanilla (I use less of the dbl strength stuff)
1 1/2 cups confectioner's sugar, sifted

Whip cream, cover in bowl and refrigerate. Blend cream cheese & mascarpone until smooth. Add vanilla and add sugar. Blend well. Fold in whipped cream and refrigerate until needed.

This is a very traditional old southern cake that recently became popular again. It's quite yummy. I hope you try it.

New Year's Party

As you know, the party was at our house on New Year's Eve. It's was lots of fun. It takes very little planning and coordinating and we have a great time. Here I found the actual e-vite that I sent:

Ok, here it is, the long awaited for (LOL!- what fools you are!) formal e-vite to the annual New Year's Eve Party/Bash/Extravaganza (still laughing!)...I am only sending it because some of you have told me that you need a formal invite to my house. So, here it is:

You, your families, anyone you want or feel obligated to kiss at midnight are invited to Our House New Year's Eve. As in the past, I provide the house, the grapes and the champagne (sparkling cider for the kiddies). You must bring your happy selves and anything else required to make your evening a success.
Everyone is welcome, young and old alike, extended families, girlfriends, kids friends whoever! My teens will both be in attendance (yes, they already know and apparently aren't fighting it this year as I was told they each have invited people- yea me- they gave in!)

Reminder or in case you are a first timer: I have a pool that is not child proofed. You are responsible for watching/chasing/jumping in after your own child. Although there are usually many grandmas around keeping an eye on that. Dress: casual (unless your tradition requires dress-up) but your kids will probably be playing basketball in the back or football in the grass up front. Do not be surprised if they end up dirty and sweaty. Music: we have a DJ (15s friend, has once again stepped up for the show) who we happily coerce into playing whatever we want so that everyone dances (unless you don't want to). The selection will include everything from Partridge Family to Tim McGraw to Chirino, Celia Cruz, Madonna, Beyonce and beyond. Food: If you want to eat it, bring it and a little to share. There is always a ton as typically y'all don't know how to bring just one thing and bring multiple items - not that I'm complaining ;)

Traditions: We already do the following:
* eat 12 grapes (provided by moi; good luck for each month of the new year)
* champagne toast (provided by moi; because we like it ;))
* toss a bucket of water out the front door (one rep from each family please) (representing the dirty water from the cleaning of the house that day to 'throw out the evil spirits' )
* eat lentils (provided by M's mom for prosperity and fortune in the new year)
* parade around the perimeter of the house with luggage (I provide backpacks and other bags that we share, to provide travel in the upcoming new year)
If you have another tradition, bring it and we'll do it with you!

RSVP (or not). I'd like a head count to have a clue how much champagne to get but if you say no today and decide yes on the 31st, PLEASE just show up! There's always room for more. The door will be open, just walk on in and make your way to the back. The celebration goes on rain or shine or cold (Bwahahaha- you think it gets cold here!) We've put up tarps before and I also have a coffee bar set up to warm you or sober you up.

Some of the yeses turned into nos, the maybes were all no shows. So the next day a final tally brought us to 60 people and we planned for 70 so, pretty good. There were a couple of new families that came this year and I hope we didn't scare them off with all of our funky traditions. We were reminded of one that I had forgotten: to wear yellow underwear. I am told it's a Costa Rican thing and I really wasn't told what it's for but no matter next year I will ask Santa for new yellow undies.

18 was actually sick and didn't make an appearance until after midnight and we laughed when he told us that he put 2 pillows over his head when he heard the Christina Aguilera song "Genie in a Bottle" come on. You see when that song came on everyone started chanting for hubby. He dances like a genie- it's quite a sight! You know that DirectTV commercial with Beyonce. Well hubby says he's perfectly those moves for next year- OMG! moving on...I was able to get all of the boys to dance this year. Most of them are in their teens and get very embarrassed but that's my job, to embarrass children, and I am very good at it. The most difficult of the bunch, one of 18s best friends, was obliged to get up and 'teach me a version of Solja Boy'. It was lots of fun.

I can't wait until next year as each one gets bigger and better... good friends, lots of family, good fun...happy new year!

Here I am!

I guess I fell off the blogshpere for a while. I was busy being busy with the holidays. I hadn't even read another blog until today. I have quite a bit of catching up to do. Not that I'm not busy anymore, I mean. New Year's Eve is at my house and well, it's not ready at all!

I had a lovely Christmas...Eve was spend with the family at my in-laws... good food...good company...good fun! and Christmas day we spent a lazy morning at home and then headed to my SILs and visited my dad too as he lives near her. The nephews got a Wii, so we spent hours playing guitar hero and boxing and tennis and and I knocked out my 18 playing the boxing. It really is quite a workout! Lots of fun.

18 and SIL both bought my hubby the SAME pullover shirt. We thought that was a hoot because with ALL the stores in S.FLA. and all the pullovers how did the 2 of them pick the same one. But then SIL and I both bought her boys the same book, her 6 year old was very confused that Santa would duplicate like that but we told him that he's really old and sometimes old people forget stuff and make mistakes. He said it was ok, that he forgave him because he brought lots of other cool things.

I did lots of baking all season, lots of shopping, lots of wrapping, lots of visiting, lots of cooking, some scrapping and other things too. I can't write about it all now.

Oh, another fun thing happened. When we got home from MILs on Xmas eve, there was a white envelope sticking out of out mailbox. I asked 18 to get it since it had been raining off and on so that it wouldn't get wet. He pulled it out and I see that its a big 8x10 envelope.
ME: Where's it from?
18: Loyola
Me: Congratulations!
18: How do you know I got in? It could be a rejection letter.
Me: Rejections are short and sweet; acceptances are think with information.
He goes inside and opens it. He was accepted to Loyola in New Orleans.
Hubby: So Santa came by and you don't even believe!
