After walking around and assessing all the variety of food options our stomachs forced us to make a selection at 10pm. We chose The Brooklyn Diner because well, it's so not Miami and it seemed fitting as our 1 meal in The City. The tux clad maitre d' seated us and gave us menus that boast the Best Burger Platter in the city. The couple speaking Portuguese next to us is enjoying a great looking NY style pizza pie. The two men we past on the way in speaking Italian are enjoying a lovely NY strip steak, baked potatoes and green beans as they discuss home politics, the 2 all-American tweenage boys a few tables down are finishing off their cream sodas as they pull out stacks of $20s and try to calculate the appropriate tip. They decide to leave $60. I can only wonder what they ate or is it they can't do the math. We smile at each other as we hear Spanish being spoken by the 2 men busing the tables around us. We watch as the sidewalk fills in with the after show crowd and a few come in dressed to the nines and order a good bottle of red. As we sink out teeth into the Best Burgers in town an elderly couple sits a few tables down from us. In their thick Long Island accents they argue about what to eat at this hour. She wants a breakfast platter he wants a dinner platter. He insists this is no time to be eating breakfast fluff, she needs real food. She defends her decision in that if they serve it then the timing must be right. He ends up with Spaghetti and Meatballs after futile attempts to order the pot pie and a few other selections that they were out of. She says it will keep him up the rest of the night but she caves to his no breakfast for dinner pressure and orders a Salmon burger but says she won't eat the bread. Our waiter chatted with us and turns out he's from Florida! from Boca Raton in NYC going to school. He misses Florida even though he never thought he would and says he will be back in a couple of years when he's done there. You take it for granted when you have it but you miss it when its gone. He's learned the lesson young. Good for him. The burgers were indeed some of the finest we've had. Perfectly cooked his well done and mine rare. Yes, we are a couple. The pickle quite frankly was delicious. I haven't had such a good pickle in a very long time. We bundled back up and headed out to walk to the garage where we left our car and while in line we overheard some show reviews. It was a great way to spend an evening. I love people watching.
The overheard from strangers while in line reviews:
The Bonnie and Clyde show is way way too long. The songs are good, catchy even, the performances string but the show just too long. It needs to be cut by at least 20 minutes.
The Adams Family was superb. Everyone in the world should see it.
The Anniversary performance of the NY Workers Union is not for everyone. It can only be appreciated by those who were there and understand its roots.
Assorted musings and rants as I search for balance, peace, understanding and happiness.

Spring Cleaning sort of
I cleaned out my closet this weekend. Well, that's not entirely true. I took out all the clothes, sorted through it, separated a few things for donation because even if it fit me I just didn't want to wear it anymore. I sorted the remaining items and out it all back in.
I sorted it first by size. I have clothes in 4 different sizes. Then within the size I sorted summer and winter which a very subtle distinction for most of my clothes here in Miami.
Any other year this project is undertaken I would have gotten rid of anything that didn't fit. But its different now. I am actually loosing weight. Three weeks ago I started taking a prescribed appetite suppressant and its working. So, theoretically, all of the doesn't fit clothes should fit eventually. And since its sorted by size it will be easy to find something to wear as I loose weight and presumably get rid of the larger size items. At least that's the plan right now but life's a moving target so I tend to write these things in sand not concrete.
Now, I said that I have 4 sizes which is technically true but the smallest size item is kept merely for sentimental reasons and truly I never expect to fit into again. So, I really only have wardrobe in 3 sizes. Now, we need to understand that wearing most of these items will depend on loosing the weight evenly top and bottom. LOL! And I have as of yet to start doing any exercising that would help in any way. I am toying with some local classes of Tai Chi and Zoomba. I am still looking into it and haven't committed to anything. We'll see how this goes.
This week the family is getting a cantina (pre-ordered food from a local cuban restaurant) so that I don't have to cook. I will tell you its not that its hard to cook for them and not eat it because the pills are doing their job and I'm not hungry but its ticking me off. I make all this food and then I can't enjoy it because I take a couple of bites and I'm full. I acknowledge that in that state of mind I am not the most pleasant person to be around. And so this week we are going to try to minimize that by pre-ordering the food for family-sanity sake.

The System
Last Saturday when I made the truffles and the Marmalade Cake and went out to the family gathering to celebrate a birthday, I didn't do the dishes. Sunday morning I got up and made breakfast and then vegged a bit and watched a movie still not doing the dishes.
I was going to do them but Saturday I was busy and then tired and Sunday morning I wanted to be a bit lazy.
I started doing other things and one thing lead to another and well here comes dinner and I still haven't done the dishes. They were piling up. It's not like I have to do them all by hand or anything although there are quite a few things that are not dishwasher safe but the dishwasher was full and so that meant I had to empty that first. Well, you can see that this is leading to a very full kitchen sink.
I have a double sink and frankly both were full. Shameful I know but this isn't an everyday happening it was a one weekend happening. I am sure (read: I truly hope) it has happened to you. I feel obliged at this point to make note that I don't do all the dishes on a regular basis. I cook and hubby does the dishes. That's the deal. Well, as you know hubby isn't here and so I am cooking AND doing dishes. Have I mentioned I don't like doing the dishes. Not that I imagine anyone actually looks forward to doing the dishes but I really don't like doing the dishes. It may have something to do with all the tables I bused and dishes I washed in Freshman year as detention in boarding school but that's another story.
Back to the story, by Monday afternoon when 17 and I got home he actually commented, if dad were here he'd have a heart attack looking at that sink. He's got a system. That's his new nickname - the system. He's got a system for everything, he's always got to follow his system otherwise things go bonkers. The System.
I tried to explain to my loving son that there is something to say for spontaneity and creativity. That everything doesn't have to have a system to get done. Of course this was while I was doing the dishes so I am not sure the point came across very well. Regardless, the dishes got done (that night) and more meals have been made and their dishes have been done and frankly I find it all a bit boring. I like just creating the meal and walking away. It was much more satisfying.

Vanilla excitement
I am so very very excited. I ordered vanilla beans online. I have been reading reviews for a sundry of places to order from and finally picked one and placed my first order today. I am starting small I only ordered 10 beans but I'm still excited.
Why am I so excited about getting vanilla beans? Well, I'll tell you because I am going to make vanilla extract. From everything I have read it is super simple and one of those things that I have read once you do it you can't go back to store bought extract. We shall see. I hope so because if this succeeds then I will also be gifting homemade extract in the near future. How cool is that? Well, I'm excited and if your not and you see me live and in person then you may want to make a comment or two in that vein because you made well be a recipient of said extract.
I can't wait to get it and I can't wait to make it and I can't wait to try it.

Dots of Doing and Liking
In an effort to keep tabs on my progress with this year's theme of "Do what I like. Like what I do." I think I am going to start a weekly or so entry of a list of Dots to document the abundance of action that will abound this year. Work with me people. Here's the first list:
* I agreed to a Scrap club with some girlfriends. I'm not sure how this will work other than its once a month but I like the friends, I like scrapping and have lots to scrap so it sounds perfect. I have no idea how I am going to schlep all the stuff that I use when scrapping but I am sure that the logistics and details will sort themselves out.
* I took a nap. I realize that this sounds contradictory. I am celebrating the doing of nothing well not nothing but sleeping. What needs to be understood here is twofold. First, I rarely sleep completely and soundly through the entire night. Second, the only time I ever sleep during daylight hours is if I am sick and I am talking really sick. So, I stopped everything (paused really) and took a nap on a Sunday afternoon for a whole 35 minutes! That my friends is (in)action at its best for me.
* I made yummy side dishes for me this week that only I enjoy and let the men stick with the boring stuff I have been making for years. I made wild rice to have with chicken and roasted veggies. I made a lovely mixed greens salad with a lively lemon based dressing and a sprinkling of pomegranate seeds on top. I made a pasta salad using whole wheat rotini and marinated artichoke hearts to take to lunch for work that was delish!
* I found my pretty stationary that I haven't used in years. I am planning on writing some letters to some family that I have lost touch with.
* I WENT to scrap club which from now on will be known as S.I.S. and had a blast. I got THREE pages done. I am so happy. I already learned some things that I must take with me next time. I also got lots of inspiration seeing the pages the others were doing.
* I tried a fruitcake and survived. Not only did I survive it was tasty. The thing is I hate fruitcake but this one was touted as the best ever and ya know what it was good. I could eat this without having to pretend to like it because it was good. I want the recipe and will gift it next holiday season.
* Had coffee with some friends that I hadn't seen in a while. It was great catching up in person because even though we email in person is great.
* I chatted with 17. Just the 2 of us caught up on an assortment of things and it was nice. He told me about the trials of prom preparations that SAC is going through and we laughed at some of their ideas and problems. It was very nice sharing time.
* I may not have liked the cold blast we got but I certainly liked curling up under the comforter straight out of the dryer. It was a stroke of genius if I do say so myself!
Here's to Doing what I like and liking what I do!

What?!
I can't hear you over the cacophony of thoughts in my head. The loop de loop that is the list of things I want to do. It's as if there was a scratch in the record and it just keeps replaying the same part over and over again. It pretty much sounds like this: clean this, bake/make that, wrap something, clean this, bake/make that, wrap something....
Gratefully, friends came over on Sunday and even though I know I talked about baking I didn't. I truly disconnected for a while at least. I sat, talked and laughed. Imagine, I enjoyed some downtime with a friend. How awesome is that? Of course, as soon as they left I cleaned something, wrapped something and planned the next day's baking (all the making is done!). To give you a clue as to exactly how much this has taken over my brain. I found myself (I think I was sleep walking) in the kitchen at 2:45 standing in front of the open refrigerator. I don't know why exactly but this morning when I actually woke up I felt a compelling urge to check the supply of milk on hand. Who knows.
I have also started thinking about next year because apparently I don't have enough on my plate trying to finish this year that I feel I must start with the next one. What do I want to do next year? Am I happy with what I 'did' this year? Should I set goals or just let the year roll however it wants, as if my goals could actually alter that anyway. But I want to do so much baking before then, hmmm maybe I should start baking for next holiday at the start of the new year. Can I freeze things for a whole year? Will they be any good? Maybe I should research that a little in all my free time? I'd really hate to do the work and freeze the stuff and then it would be bad next December and I would feel even more pressure than I do now. OK, I need to stop thinking about January and focus on the 3 days I have left. Yes, I can do math! I know that Christmas is the 25th but we have our big celebration on the 24th and since I have to work on the 24th, I need to have everything finished before going to bed on the 23rd. So, 3 days left to do whatever is going to be done.
The trick is to get it done I need to shut my brain off so that I stop thinking all these other miscellaneous and assorted rambling thoughts and focus on the day I we are in right this very minute. I don't know how to do this.
So, tonight the kitchen goals are: chocolate crinkle cookies, mix & refrigerate pie crust, mix & bake a batch of sugar cookies and refrigerate another batch, make coconut macaroons, make truffles (maybe), make biscotti (maybe), make a grocery list for hubby to buy final ingredients needed for holiday desserts that I was assigned to take for the 24th plus what I am taking on the 25th.
Tomorrow's goals are: Wrap a bottle of wine, box & tag the final cookie gifts, go to coffee with girlfriends
Wednesday's goals are: Bake 2 desserts for Xmas eve and any remaining cookies.
You will note that I have truffles and biscotti as maybes. I have all the ingredients at home for both. These are both new items that I have never made and been wanting to try. I actually already mixed the truffles and the batch is sitting in the fridge so that has a better chance at getting done albeit maybe not in time for Xmas but for New Year's Eve. We shall see. I have an assortment of things to coat them in such as cocoa powder, confectioner's sugar, Xmas sprinkles, 2 colors of sanding sugar and pecans. Why so many well its simple I couldn't decide so I got them all and figured I'd decide when the time came and its almost here and I still don't know what I'll do. Who knows? not me.
So, like I said lots going on but really its mostly in my head. LOL!

I am NOT! I am!
I am not going out this weekend. I am not running any errands this weekend. I am not leaving my house this weekend. I am not going out this weekend.
There! It's in writing and on the Internet, therefore, it must be true.
I am going to stay home this weekend. I am going to finish my gift sewing this weekend. I am going to do all the Xmas cards this weekend. I am going to start wrapping this weekend (especially those that must be mailed). I am going to get lots and lots of baking done this weekend. I am going to be exhausted and satisfied after this weekend.
At least that last line if true... Tis the season people! Gimme patience for all this comfort and joy!

TCO or Only in Miami...
A TCO is a Typical Cuban Operation and its what I (read: my family) refers to as things you can find only in Miami....
This past week a local ethnic market had a grand opening near my home and had some fabulous sales. I mean they had things on BOGO (Buy One, Get One Free) that I have never seen before: milk, coffee etc.
So, I tell hubby he should go by on the way home from work to just get a handful of things. That was Wednesday, he couldn't even park the truck, almost got in an accident and said there were even cops there to help with the traffic. He gave up after 20 minutes and came home.
So, we wrote a short list and gave 20 the credit card and he would go during the day. That was Thursday. His attempt was in the afternoon before picking me up from work. He gave up after 15 minutes of searching for a parking space.
His second attempt was on Friday. He was there early (by 9:30) and sent me a text: Does this place ever close? Says it took him a while but he did finally park. As he was walking to the storefront he saw a large group of people standing around and thought to himself OMG there cannot be a line to get in this place, that's ridiculous. As he got closer he realized they were standing at the exit door and couldn't understand why. He thought they were nuts and proceeded to enter the store. He looked around, there were no carts. Light bulb moment: that's why they are standing at the exit to follow people to their car and get their cart. He doesn't have that patience or time so he proceeds to the fruit and vegetable section to get the BOGO lettuce puts in the plastic veggie bag. Gets another bag to put in the plantains which are 10/.99. He how has 2 bags and heads to the milk section which he thought would be by the juice but not in this store. He finally finds it and grabs 2 gallons; again BOGO. In one hand he's carrying 2 gallons of milk and in the other he has 2 bags one with lettuce and the other plantains. He now goes the to vino seco which is also BOGO, scans the shelves, sees some are in plastic bottles - cool, dang those are on sale. The sale ones are glass. No fear he bought more bags. He puts everything down on the floor to bag the 2 bottles and picks up the milk and the plantains and the lettuce is gone. He looks around. OMG, someone stole his lettuce. He goes back to the veggies, gets lettuce again and notices that what he had grabbed as plantains were actually green bananas. He leaves the bananas and looks at a group of grandmas hovering the plantain section. He walks over and they are grabbing the last ones. The other stand there arms crossed to wait fro more to come out. He's outta there. No plantains for us today. He now goes to the coffee and bags 2 of those. In all of this he is seeing men walking around with stacks of meat on their shoulders, women with carts that have mountains of groceries that defy gravity. He's amazed at the chaos and the shouting going on amongst the shoppers and this is the child who goes Black Friday shopping.
He heads to the registers with his bag of lettuce, bag of coffee in one hand, bag of vino seco under his arm and 2 gallons of milk in the other hand. He figures its a toss up which register will move any faster than the other.
The checkout line crawls because the conveyor belt isn't long enough to hold all the purchases to empty the cart to refill with the bagged groceries. More yelling and chaos there. The person in front of him is a tad hard of hearing and the exchange between the cashier and patron is hard to not laugh at.
He finally gets home with his purchases and after we wipe the tears from our face from laughing so hard at his story he hopes we NEVER send him there again.
Too much fun!

Tempus fugit!
Wow. Time flies when you are having fun. I have been a busy busy girl. I can't believe it's been over a week since I have blogged. So, here's a quick recap to get us back on track.
*19 turned 20. He wasn't here for his birthday. He was having finals but he got here before Thanksgiving. So it's all good. I will admit that the fact that I have a 20 year old makes me feel older.
* Thanksgiving happened of course. I hope everyone had a wonderful one with family/friends. I made a new Cranberry sauce recipe which came out super yummy and I made the sweet potato casserole, and I made an apple pie. I also made a cherry pie but that one stayed home for us to eat.
*Thanksgiving would have also been my mother's birthday. That was why I made the apple pie, it was her favorite. She would have been 65, ready to retire. She would have enjoyed retirement because she had so many hobbies and crafts that she loved to do. She finally would have had the free time to do them. But I am sure that she has knit everyone in heaven a sweater and made candles and baskets galore. I thought of her a lot that day and how different my Thanksgivings are compared to growing up but that will get me all misty so I am moving on...
* I went shopping on Friday because I always have and 20 went with me to pick out and try on his gifts. We had a good time and found some good deals. There will be more stories about that later.
* Over the weekend, we put the lights up outside, brought out all our Christmas decorations, bought the Christmas tree, put the lights on, decorated it and started decorating the house. Aside from all the regular boring laundry and grocery stuff.
* This year the gift for the in-laws was a group gift from us and my SIL. We gave them tickets to go see Andrea Bocelli. The concert was over the weekend so we had to give it to them at Thanksgiving. They had a fabulous time. She called us when they got to the venue, she called when they got to their seats and she called the next morning to tell me all about it. They had such a wonderful time.
* We also got together with friends to just hang out and chat. I made Paula Deen's Ooey Gooey Pumpkin Cake. It was pretty good even though I overcooked it. We had a nice time.
*I made batches of egg nog and bottled it. The bottles are all in my fridge waiting to be gifted. I still have one more batch to go but I ran out of eggs so that's the thing to do today. I need to make it early because it needs to sit and the flavors need to combine and mellow. Yumm!
* During the week I want to get the Christmas cards done, address and mailed. That's the goal. We shall see.
So, I hope everyone had a lovely Thanksgiving. I know that I have many many things to be thankful for and that I am one lucky girl.

Provence
I want to travel someday and one of my dreams is France. It has been since I was a little girl. I don't even remember when it started. I just seems to have always been there this wish to go to France. It's not specific to Paris - although its a must, duh - I want to see all of France.
In that vein one thing I have always wanted to try cooking with is Herbs de Provence. A unique blend of dried herbs including savory, fennel, basil, thyme, and lavender among others. Not a list I generally use in my daily cooking. I have always found it in catalogs and online in cute little ceramic pots that just evoke French country cooking. I've never bought it. I have never bought any herbs online, the whole 'know a reputable dealer' and all. This isn't something that I have ever really pursued or researched or even intentionally sought out. It has just been there in the back of mind.
Well, the other day walking through my local grocery store I had a coupon for a latin brand of spices that was about to expire. I was glossing over their selection assuming I'd get something ordinary like onion powder and then I saw a little tag that said "NEW Gourmet Blends". They had Italian Spice Mix and wait for it Herbs de Provence! HUH?! I couldn't believe it. I had to get it. I think they new I was coming and put it out just for me. I figured how bad could this be. They are dried herbs. I am sure there are better quality dried herbs but how bad could this be? I read the ingredients. Thyme, Basil, Savory Fennel, Lavender - wow, they are all there! I could not wait to get home and open it up and smell it. When I did, I could smell them all distinctly, I was soooo happy. I laughed to myself. Such a little silly thing a plastic container of dried herbs was making me giddy. I HAD to use it that night. Dang- we were going out. Fine, the next night. I made our Sunday chicken which is just a baked chicken. Perfect. I was smiling just shaking it on. I was the only one that noted the difference as it cooked. There was a hint of flowery lavender in the air. This did make me a little nervous because typically I have not liked flowery flavors in my food. I have tried many a dessert with lavender or rose water and sorry to say had to spit it out. But I was confident that I would like the chicken. At dinner I waited for the others to try it first. They made no comment. Then I tried it. YUM! There was definitely a difference how could they not say anything. I asked them if they liked the chicken. They both said yes and asked why I was asking had I done something different to it. Yes, I told them I put different spices on it. They shrugged. They couldn't tell. URGH! No matter, I could tell and I liked it.
I have since added it to a number of dishes and they still can't tell. I even added it to salad greens but the flavors were a bit strong for me. I prefer it cooked. So, I still haven't been to France but I got a little piece of Provence in my cabinet. Comfort and Joy!

Garbo, Sleep and other assorted non-essentials
I have been meaning to blog, really I have but I haven't had time. By the time I finish with all the daily must-do stuff it is close to midnight and I think blog or sleep and sleep has been winning in that toss up.
So, here are some quick blurbs on what's been going on.
* I recently saw the movie Grand Hotel. Yes, that ancient black and white flick starring among many others Greta Garbo. Why? Because I had never seen it and its a classic and football season has started. Lower your eyebrows! Football season and classic movies do so have something to do with each other. After many years of marriage I have learned that Sunday I cannot watch TV in the living room during football season. Over time that unwritten and much enforced rule has spilled over to Monday nights, parts of Saturday day and sometimes Thursday night. That makes for lots of me time for me and my hobbies. I don't use this time for scrapping because that is set up to do while watching TV in the living room so this is either sewing time or reading time or movie time. This is why its the time of year when I shuffle the queue and a few classic movies get bumped to the top of the list for my viewing pleasure. Which brings us full circle and is why I recently saw Grand Hotel. It was so much fun to watch Barrymore, Garbo and a young Crawford! They don't make movies like that anymore. Seriously, the way the scenes are shot, the close-ups, the dramatic hugs. I also love watching all the special features with all the old stories of how this and that were done. Fun!
* I made Peanut Butter Bread. What? Never heard of it? No worries, I hadn't either but I saw it on a cooking show and made it on Saturday. We had it for lunch with wait for it, you guessed it - jelly! We didn't make sandwiches. We just sliced the bread and spread jelly on it and ate it. It was good. I wouldn't say it's my favorite or anything to write home about (just the world wide web) but it was something different. Hubby loved it. He's been having it for dessert every night with a glass of milk.
* I want to paint my guest bathroom. It's very small. The floor and half way up the walls are tiled in small black tiles. The fixtures are all gold and it has a white pedestal sink. I want to paint it a jewel tone color. I am really thinking about purple. Not a lavender or mauvy color a true jewel tone purple. My family thinks I'm nuts. It's such a small amount of wall space that it will only take a gallon. So, I figure if we hate it we could always paint over it. We'll see. I am still trying to convince hubby.
* The remote to the TV died. Over 2 weeks was spent banging the thing against the sofa or your thigh to make it work. I did not do this. It would work sometimes and sometimes not. When it didn't work, I didn't watch that TV. I told hubby to call our satellite company and order a new one. Did you call? I didn't think so. After 2 weeks of this it finally died for real. It wouldn't do anything. So, I went online and ordered a new remote. Ta-dah! It was at house in three days. I know, magic!
You're not all caught up but hopefully I will have time later to pass on all these life-altering tidbits.

9 lbs
I have 9 pounds of cookie dough in my house and I am trying NOT to eat it. So, why did I buy it? Because I'm a sucker that's why. Earlier this summer 17 was selling said 3lb tubs of cookie dough as a fundraiser for his Cross Country team. You would think they would sell trail mix or something healthy but they went with cookie dough. He only had a week to get the orders and got quite a few including 3 from me. Yes, 3 not 1 like normal people. Why, because no one likes the same cookie in my house. 17 wanted Sugar cookies which 19 and hubby don't like. 19 wanted Oatmeal Raisin which 17 and hubby don't like and Hubby wanted peanut butter which neither boy likes. Alas, 3 tubs of 3 lbs each were ordered and have since arrived. I didn't get any "for me" because I eat all the aforementioned cookies and therein lies the problem.
Of course, they get here only a couple of days before 19 leaves so he wasn't able to eat his 3 lbs so I put it in the freezer to await his return and make it more difficult for me to eat since it will require thawing in addition to the bake time. But there are two tubs left in the fridge. Every night after dinner I ask, want some cookies in the hopes of baking some off and making them disappear but it only worked once. Ay. I need to be strong. I need to not eat two tubs of cookies.

New thing
I really don't try too many food things. I mean I try new dishes but the main ingredients I've had them. For example, I think I may the only person in Miami who has not tried Dulce de Leche ice cream. See, my logic is I don't need to like that because its not good for me and only going to be another thing to add to the list of things that I shouldn't eat so why try it in the first place. But fruit is a different category. Its in the good for you category and therefore they should all be tried and I discovered I LOVE passion fruit. I had never had it. I didn't even know how to eat it. This weekend I went to a farm in The Redlands to pick up some items that a friend of mine and I had ordered (not passion fruit) and I say a pile of these round things in a box. I asked what they were ever trying to expand my knowledge and they were passion fruit. She told me she had an extra bag that she could sell me. I wasn't going to buy any because well I've never tired it and so didn't want to waste my money. She asked me if I liked tart things as she was cracking one open and got a spoon and handed it to me. QUE RICO!! I loved it. She explained how to tell if they were ripe etc. as I fished out the 3 bucks from my purse for that extra bag she had. I split them with my friend because she tried it when she got to my house and liked it too. But man I could eat a bushel of them and if I start to get bored of eating them straight I can think of umpteen uses from salad dressings to marinades. Que Rico!! I have GOT to get more of these. Comfort and Joy baby! YUM!

Cooking for one
19 is leaving again in a week and a half and so I am once again cooking with only him in mind. All of his favorites have to make another appearance before he leaves so that he can have his fill. If the rest don't like it too bad, drive-thru, I am cooking for one- the one that's leaving.
To that end I will be making a flan tonight so that he can have a slice every day if he wants. I will also be making a strawberry cherry blueberry pie. Those are his desserts. I won't make cookies because those I can make when he leaves and ship to him so he has a taste of home. I already made him Picadillo again which we didn't have for dinner he had it for lunch for like 3 days. I will also make Lentils for him and I. Next week I will make Carne con Papa and Spaghetti with meat sauce and I think I need to make him Vaca Frita again. Then we will put him on a plane with a dozen pastelitos de carne for him and his roommate.
I need to ask him if there's anything else I missed. The kitchen is all about him for the next couple of weeks.

Father's Day baking and cooking
On this recessionary Father's Day I decided to bake for the dads. So, for my dad I baked up a batch of slightly burnt (that's how he likes them and yes I already confirmed years ago that this wasn't just something he told his young daughter to console her but he honestly like the taste of the overly browned cookies) sugar cookies. Of course the fun was when I gave them to him in a Christmas tin because it's what I had on hand. It gave us a laugh and he promised to return it so that I could refill it for Christmas.
I also made a Lemon Meringue Pie. It's one of hubby's favorites and I haven't made it in I think like 20 years. He didn't think it had been that long but I think he's confusing Key Lime and Lemon Meringue. The meringue did separate slightly from the crust but the filling didn't weep or separate so it still looked OK. And it was tasty if I do say so myself and I'm not a really big fan. I just had a little piece to taste it.
I also attempted to make a Lemon cake that was trashed. I have no idea what I did wrong. I'm sure I forgot a key ingredient or two because it didn't bake right, it didn't set up like a cake. I didn't stress it, I just trashed it and kept going. I still have the recipe out and I WILL try it again and I WILL get it right.
After all of that, last night I did the first part in the preparing of Vaca Frita. I am making that tonight for some friends and 19s girlfriend who are all coming over for dinner. That means I had soup today for lunch because the first part is boiling the meat which produces an awesome beef stock to which I added a bunch of veggies and a bag of egg noodles. It is so good.
Next weekend I plan on sewing. Let's see how that works out.

Another New Project
I am not going list the piles of photos waiting to be scrapped or the stacks of fabric waiting to be cut and sewn into dresses and blouses not the stacks of magazines waiting to be culled or the bag of scraps waiting to become a quilt or needless to say the stacks and piles of book to be read. Instead I am going to ell you about a new project I feel must be done (read: started). Gathering and organizing recipes. Why, should this be done now? Because I lost or shall I say can't find because it's probably buried or attached or stuck in some cookbook somewhere a recipe. My carrot cake recipe. It was a photo copy of a handwritten recipe card of the wife of someone that hubby used to work with. I've had it and been making it for Easter for I don't know maybe 10, 12 years until this Easter. I couldn't find it anywhere. I spent 4 evenings looking for it. Nada. I remember most of the ingredients but not the measurements and so began my search on the Internet. Gratefully, I found what I thought was a comparable recipe. Crisis averted. The key to this recipe is baby food. It makes it sooo moist and yummy. I made it and am told that it was a success. I don't particularly like carrot cake but I tried it and it wasn't horrible so that would be good for everyone else.
Now, I realize I don't have babies and don't buy baby food on a regular basis but let me just say Boy! have things changed! I remember their being 3 stages of food and 2 maybe 3 brands. Stage 1 was completely strained, 2 was strained but a few little chucks to start giving them some texture and maybe learn to chew a bit but they really didn't have to if they didn't want to and 3 they had to chew if was babied down real food. Now there are like 1/2 dozen brands including organic and since its on the same shelf space the variety has been greatly reduced. I could not find my stage 2 carrots! I needed strained with little bits in it. Not happening! Only strained carrots were to be found. So, I ended up grating real carrots AND using the baby food to get the texture I wanted in the cake. More work than I had bargained for but apparently worth it.
I was given an altered composition book quite some time ago designed to put family recipes in but honestly I haven't used it because its so pretty. I have only stuffed it with the scraps of paper that I find recipes on after the family has tried and approved them into the pages of the book. It's like I don't want to mess up the book by actually writing on the pages. I want to leave the possibility for fantasticness. If I write in it then the magic of how great it could be will be gone and then what?! I had this same problem as a kid with my Disney princess coloring books. I would color the entire book except for the one introducing the princess in her dress. I could never bring myself to color the dress because I might mess it up. What if I didn't pick the bestest combination of colors, shade it right, color it even, make it beautiful enough? If I colored it, it would be a done deal. As long as it remained uncolored the possibility for unsurpassed beauty, creativity and the perfect princess dress were still an option.
So, I am going to bite the bullet and write in and put tried and true recipes in the book that was made for me with love for that purpose. At least that's the idea for the new project. I'll let you know how it goes.

So, I am going to bite the bullet and write in and put tried and true recipes in the book that was made for me with love for that purpose. At least that's the idea for the new project. I'll let you know how it goes.

Another Sunday dinner
This time I made the time honored Sunday Chicken so that the world would continue on its customary rotation. Still things happen proving that its not because I didn't make the aforementioned chicken. Still, I am told that it would have been much worse had I not made the chicken. Whatever!
We had a lovely Saturday morning attending my nephew's 1st Communion. It was a very nice ceremony. I got a great picture of him and his cash gifts that's hysterical!
After that we hurried home to change and head back out to a track meet that was interrupted 4 times by rain. At one point hubby and I ran to the truck and sat there for over half an hour waiting for it to stop. the fifth downpour made them call it off. So, all that running around and getting wet and waiting for nothing. Oh, well.
Sunday I got to sleep in (10 o'clock!). I started laundry and at one point noticed 19s light was on. I opened his door to get dirty clothes and noticed he wasn't in bed. HUH? How did he leave and I didn't see him? I see his comforter on the floor and start walking over to pick it up and put it on the bed then I realize he's under it! on the floor! Why is he sleeping on the floor when he has the newest and bestest mattress in the house? Befuddled I turn off the light and close the door. 16 sees me and wants to be sure that he didn't wake him. He was trying to be quiet. I tell him he's sleeping on the floor. Huh? Why? I don't know. Look. I open the door and turn on the light. He see him. We retreat and he asks me why is he on the floor? I don't know.
The morning continues with breakfast, laundry, menu planning, grocery lists, online banking, a call to my brother and 16 returns from mass announcing he's going to the beach. Wait, I have been waiting for the car to run my errands. Are you taking the car? Well, if not you have to drop me off at a friends house right now they are waiting for me. I grab my things and we get in the car. We soon discover that I left my wallet at home and only have 2 loose dollars to give him to go to the beach. He goes anyway, hoping to borrow what he needs from others. So, I have to return home to get my wallet and go visit GM. As I am ready to head back home, 19 calls on hubby's phone because he can't find his phone and can't log in to his laptop. We have no land line in the house so he's basically cut off from civilization because he won't use the desktop because he says its too slow. He was actually knocking on a neighbors door to ask to use their phone when hubby pulled up and saved the day.
We go to his girlfriends workplace to borrow her phone because gratefully she has the phone # of where we think the phone is. Bingo! It's there, thank God for small favors. He goes to pick it up while I continue on the house chores but not before he enlightened me to the fact that he slept on the floor because it was hot and the floor is cooler than the bed. Go figure! We still can't get the laptop to work and so I enlist friends who are more computer savvy than I and hopefully today we get it fixed. I also had a new keyboard ordered for it because he's missing the i key and it a very common letter in the English language, in case you didn't know. It's even used 3 times in his password which was a pain in the butt without the key.
I had made another flan to see if I could get it right before he left and we tried it after dinner. I nailed it. Delish! We also had tres leches which friends brought over and 19 loves. So, I made the Sunday dinner, enough to include girlfriend who didn't join us for dinner only dessert which gave me leftovers for lunch today. And 16 didn't grace us with his presence for dinner as he had dinner with his beach friends.
We hung out after dinner catching up on 19s friends from grade school to find out that many of them aren't doing so well in college, some are drunk most of the time, some he says are doing drugs and one of them is pregnant. It was a bit of a rude awakening. We even dug out a yearbook to make sure we knew who we were talking about and 16 found a picture where 19 looked like the actor from the slumdog movie which he afterwards went to see with his girlfriend.
That was I am told a good Sunday that would have been much more gone awry had I not made the Sunday chicken. Gimme patience.

Top of the morning to you, and the rest of the day to yourself!
There is absolutely nothing Irish about me. I'm sure we'd have to go back to the beginning of time to trace any roots even remotely near Ireland. Yet, somehow, today everyone has a little bit of the luck 'o the Irish in them, don't they? I remember in grade school going around pinching people if they didn't wear green. My kids both had the same Irish teacher for 2nd grade and she taught them (read: us) this Irish blessing which still makes me smile and think of her.
May the road rise to meet you,
May the wind be always at your back,
May the sun shine warm upon your face,
May the rains fall soft upon your fields and,
Until we meet again,
May God hold you in the palm of His hand.
I am making Irish Soda Bread this evening to go with my Carne con Papas because well, we live in Miami and that how we roll. Cubans did not melt in that great 'ole melting pot of the USA, we prefer a kaleidoscope, always able to show our colors. Today just has a bit 'o green in it, just for fun. Enjoy your day! Here's one I remember from my childhood.
May good luck be your friend
IN whatever you do.
And may trouble be always
A stranger to you.

Q: How many things can go wrong with one dinner?
A: As many as possible.
Sunday dinner was supposed to be some favorite Cuban dishes for 19 because he's home and doesn't get to eat this when he's not here. Fine. He's only here for a couple of weeks so I invited some friends (who are like family) over for dinner to make sure they get to see him since schedules are complicated with such a short visit. Fine. So far, so good.
The menu is decided. Boliche (essentially a Cuban Roast), Red beans, and Flan for dessert. Fine. Everyone likes that. It's all good. Well, the snafu is that 16 likes to have baked chicken on Sunday. We have it so often on Sunday that it's been dubbed Sunday chicken when prepared this way. According to him the world alters its rotation when Sunday chicken is not had. Puleeze! It happened once but that was just coincidence. At least until yesterday.
I made the flan on Thursday. I had made 2 one to take to SIls on Friday and one for Sunday. Ahead of the game. Woo Hoo. That's like such a rarity all in itself. I was very proud of myself. Dessert for Sunday was all set. When we tired it on Friday night it was good but not great. The consistency a little off, a tad overcooked. Oh well. Sunday's might be better since it was made in a different mold maybe the cooking time will match up with that mold. We'll see.
It's Saturday. I am going to make the beans. Why so early? Because they beans are always better the next day so, I figure lets make them ahead of time. Fine. It's a slow process. I make my MILs recipe. Hubby and I have a small taste once it's done and it is fabulous. I'm thrilled with the outcome. It has tons of meat and squash in it, its delicious. Great. I put it in the fridge overnight.
So its Sunday. I only have the roast left to make. No problem. I have made it dozens of time. This should be the easy part. I also eventually need to reheat the beans which I take out of the fridge and place on the stove for later. We had bought a large roast. This is made in slices in a pressure cooker. Cooked low and slow to be fall apart yummy. As I put it all together, I tell hubby that I need a bigger pressure cooker that it barely fits in there. I start doing house chores while the roast cooks. Suddenly from the bedroom I smell something. Run to the kitchen. Somehow, magically because I certainly don't remember doing it, the beans were on HIGH and at a rolling boil! OMG! I take it off the stove and they are stuck burnt to the bottom of the pot. Crap! Who did this? Questioning everyone got me no where other than starting 16 on a tirade of I told you to fix Sunday Chicken.
At this point 19 tells me his girlfriend is coming for dinner too. Great. I mean it is great but man do I have dumb luck or what. First, it's only her 2nds time over for dinner and its the exact same menu, down to the dessert. Second, the first time the beans were over cooked and had almost disintegrated this time they are burnt. She's going to think I can only make one thing and I really can't even make that well. Ok. Fine whatever. It will be nice to have her over. More funny stories to look back on later which I am beginning to think may be my purpose on this planet.
When the time came for the roast to be done. I open the pressure cooker and it's not fall apart good. Of course. I think it's because the pot is not big enough and it didn't have enough space to do its thing. I remove the potatoes that are super done. Add some more liquid and turn it up so that it pressurizes again hoping the extra time will do the trick. I won't tell you how many times 16 has said the words: Sunday Chicken and I told you so.
My friends brought Cuban bread and fixins for a salad that I prepped and we set the table. OK. Dinner should be ready now. I am really not happy with it. The beans burned and I know the meat is going to be so so and the flan who knows. Whatever. Dinner is ready! And I screech! The rice! I forgot to make the rice. Everyone starts moaning. (I've done this before.) We're hungry, everything is ready and now we'll have to wait 1/2 hour for the rice. Forget it. I am going to dash to the corner where they sell food-by-the pound and buy white rice. 19s girlfriend is not here yet, we have some time, my girlfriend and I go to the car, 19 stands at the front door shaking his head at us like he can't believe we are ditching them in their hour of need. We park at the place and they are picking up the outdoor set up of tables and chairs. I yell, OMG I think they are closed. I ask the man as we approach. Not yet he tells me. Thank God for small favors, I think. I tell the guy at the counter I need white rice for 10 people. They really don't have that much left. I'll take it all. He packs it up. Then we see the baked chicken. I buy a piece for 16 because, I think it will be funny. We tell the cashier about the dinner snafu as I take the price off the pack so hubby doesn't see how much I paid for rice. Everyone laughs because I clearly exist for their amusement. As we drive back home, I think of my grandmother who used to buy/order the food from the restaurant and put it in her pots and let everyone think she made it. As we pull up to the house girlfriend's car is there. Can't put it in a pot now and let her think I made it when she sees me walk in with it. Failed ya grandma - sorry.
So now we start plating dinner to be served. The burnt beans, the not falling apart roast with a sauce that's not saucy because it has been cooked down so far and over-reduced, the store bought rice and the pretty salad. Whatever. I don't even care anymore. I'm barely even hungry, let's get this over with. The ribbing continues with the kitchen gods not being happy because this isn't Sunday chicken. Add to irony that had I made that girlfriend would have tried something new made by me. We relive that previous fiasco when Sunday chicken was not made. We laugh a lot. The food all tastes pretty good. There's plenty of flavor it's just not right but memorable to say the least. And now for the flan. I flip it onto the plate. And we all agree it's good but slightly overcooked. Shocker! :)
I think we had fun. An instant classic moment. One they will rib me about for many years to come. But I think next Sunday we'll have Sunday chicken. Where's that camera? I promise you, I'm not making it up. Gimme patience!

Finally!
So, I did cook over the weekend. I did a lot of cooking over the weekend. Aside from the normal dinner routine, I made: Waffles, Crepes, Oatmeal cranberry cookies, a flan and roasted beets with a butter parsley that was yum-mo and I made what I'll call a quickie Beef Bourguignon using a can of Golden Mushroom soup as the shortcut.
It all came out well. My biggest coup was the flan. I have been trying to made kickazz flan for years. It's always been good but not great. You see, hubby family makes kickazz flan. His mom and his aunt knock it out of the ball park. It's so dang creamy. They have given me the recipe umpteen times and gone over how to make it over and over and every time I make it hubby, 19 and I always agree that it just doesn't measure up to theirs.
Recently, his aunt actually gave me the same pan that she makes it in because I have been insisting that my problem is the cooking time. I didn't think I was pulling it out at the right doneness. So, the thinking was that if I had the same pan and cook it for the same time as she does, it should work. My first attempt with her pan on Superbowl weekend was a hit with everyone but hubby and I knew it wasn't there yet. Close but not quite. I think it was slightly overcooked. So, I tried it again as my Valentines gift for hubby. It's his favorite dessert. When I flipped it, I was nervous. I sliced into in and like the way the knife felt running through it. I served it and let him take the first bite. All he said was 'ummp, you did it!' as he swallowed the first bite. I tried it and baby, I nailed it! I did it! It was the best flan I have ever made. Oh, so creamy and not overly eggy or dense. Perfect! Oh Happy Day!
Now can I duplicate this? Can I do it again? That's the big question. But for now, I will bask in the glory of my flan, thank you very much.
